Last one for this year. I made iced buns, with a brioche dough, filled with dark chocolate creme patisserie, and topped with a coffee icing. Included a quick phone snap of the inside so you can see the filling.

For tonight's bake, I've made a trio of macarons. Coffee & chocolate, chocolate raspberry, and biscoff, filled with dark chocolate ganache and various flavours of swiss meringue buttercream.

Some nice news among the never-ending gloom of this week - PayGap.ie has been shortlisted as a finalist in IBEC's Technology Ireland awards, in the Tech 4 Good (Service) category. This is an absolutely lovely recognition of my work and I'm very proud of it.

It's pretty hard to make a burnt basque cheesecake look good, but I've done my best. I didn't want to decorate the top and cover up the characteristic caramelised top. I promise this tastes much better than it looks.

I checked the montreal convention and their policy carefully, 50% wasn't mentioned anywhere. I told them this, they kept telling me they were happy to confirm their policy, but kept failing to provide it in writing.

I have multiple examples of this from my own life, but a notable one is a dispute with Lufthansa when they lost my suitcase. I bought replacement clothes, and they told me they'd refund 50% (or 100% if I sent them the clothes). They said it was per their policy. It wasn't.

This picture from reddit is about the closest thing I've see to what my aura looks like. My squiggles are a bit more joined up, more like zigzags, but they are this mix of crystal-like colours and in a curve. Today's curve is the bottom left bit of an oval/circle.

I couldn't decide on flavours so I made two. Chocolate pecan topped with dark chocolate, dark chocolate and pecan inside the oats. Kinder Bueno have chopped roasted hazelnuts throughout, with little bits of the Bueno filling, topped with milk chocolate and the Bueno swirled through. #gbbo
