As I understand, the Moon-Eyed people are very specifically a Cherokee myth. If I'm wrong, I'll happily be corrected, but this likely would not have been a story existed among the Chickasaw and Choctaw of this story's setting.

No they didn't, their polities collapsed under the pressures of colonization and genocide and they coalesced into some of the Tribal Nations we know today, such as the Chickasaw and Choctaw (in this story's Mississippi setting).
