I assume remaster has connotations of puristic faithfulness in contrast to remake. Meaning that they can pretend the classic is "just like you remember!" even though it isn't.

We look upon McKenzie with scorn because he reminds us of ourselves. In Metroid Prime 4 we see everything through Samus' visor, tricked into immersing ourselves in the power fantasy of being a cool bounty hunter, but in reality we're at best the bumbling side kick. He is the real audience stand in.

Yes, back in the day they would just develop a completely different version of the game for every platform. This was normal. We did not view them as remakes. They were just makes.

I think the issue is that we have it all constantly in our faces now. I don't think it was ever actually 'good' for us in quantity, but it has certainly been super-charged with time. Not sure how old you were in 2011, but I can't say I remember it fondly.
