By GUM, I love a good banh mi. The tiny place in the laundromat. Better, even, than the old standby places on Spadina. And v. affordable. Fantastic crispy/fluffy bun. This one was crispy pork, but don’t sleep on the Vietnamese pulled chicken.

So I’m experimenting with a genius brainwave idea I had. Stuffing Katsu. It’s like tonkatsu, but with stuffing instead of rice and a savoury light gravy, instead of straight-up tonkatsu sauce. This was a quickie, made entirely with storebought parts, except for the homemade tonk-gravy.

Made a Greek-inspired, mixed-greens pie. Not too bad, honestly. I was aiming for lower-sodium, low fat, so it’s not as good as the real thing. Maybe a little too much mint, maybe a little too much rice and would definitely benefit from some feta. HOWEVER! Still very satisfying and tasty.
