It’s Chicago style deep dish, so the cheese is under the sauce. But I’d eat it sans cheese. My lactose intolerance would prefer that. Sometimes it’s worth the pain.

Ah, then yeah, we are the outlier in CA. Our water district has incredibly low mineral content. We learned that with our curling ice. The PA company that installed the first ice said we’d need 4 deionizing tanks per year. We use 1.5. EBMUD water FTW!!
