I also can't stand the stickiness. To peel garlic, I shake it in a jar, which loosens the skin so I can just pick off the flakes of skin - they're much looser. I cut off the end bit and then use a mincer (like, the little pliers-looking thing) straight into whatever I need it for - minimal contact.
