I grew up in AL and this is correct. The white sauce is ONLY for chicken, and even then ONLY in the northwest corner. It's from Decatur (where my mom's family was from), and we had regular BBQ sauce unless we were visiting them. It should be complex: tangy, creamy, slightly sweet, slightly peppery.
