2026 makes 20 Mardi Gras celebrations for me in the islands. I’ve tried to bring the 🔥 every year - be it food, music, culture.
This year I present the Mardi Gras Bagel. It is hand-rolled with all natural coloring: ube (purple), and pandan leaf (green), and tumeric (gold/yellow).

Worked my way through school waiting tables. Always had mad respect for the kitchen staff - the whole restaurant business starts with them prepping and cooking the food (and keeping the kitchen clean and orderly).
No one - wait staff, managers, owners, even bartenders - makes a dime without them!
