Excited to compare slow vs fast ferment and to use these in cooking!
Also trying a batch of amazake, but feeling a little dubious because the mix that resulted from following the instructions that came with the mold looks, too dry...Will have to see in a couple of hours!

[TN: I think this is a Kor/Eng metalanguage thing.
- In English, when we refer to giving something a kick when we’re talking about food, it means that it’s kind of spicy and has a presence that makes you notice.
- But this is a bit of a false friend if we look at the meaning in Korean, and I’m pretty sure this particular usage of 킥 is a neologism that arose out of Culinary Class Wars.
- I think Hobi’s riffing off the “Chef’s choice” because 킥 is when a chef that’s known for something specific - a style, a dish, etc - perfectly executes their specialty showcasing their skill/individuality (at least that’s my understanding of this usage).]

[TN: This entire song is One Big Pun of Korean words that mean to chew on/ingest stuff both literally and figuratively (e.g. 씹다).
- 기울려 절로 means keep drinking
- But 기울리다 also has the meaning of tilting towards something. A common expression that uses this word is 귀를 기울려 - tilt/bend your ear like you’re listening in very intently/giving someone attention.
- 절로 means automatically or on its own, fits with the lost in the sauce, no turnin’ back feeling in that you’re not really in control of your behavior around this.

- 빈 잔 (empty cup) and 핀잔 (scolding, telling-off, rebuke) sound very similar.
- 거르다 can mean to sift (so if you’re draining your boiled spaghetti noodles through a colandar, this is the word you use).
- 이젠 (이제는) means now, but now as in the now that is different from then. There’s an implied change of state in this word choice (as opposed to 지금). So this line feels pretty swaggy to me in that he’s saying that ugly words people say just fall through the holes and go down the drain.
