Retired chef here. Unless you're making a pie with a top crust where you'd want flakiness, the various store bought refrigerated crusts are perfectly acceptable. One crust pies like pumpkin or pecan with heavy, wet filings bake up just fine with store bought. Just pre-bake before filling & baking.
