Did a fun variation on an old dish from Underbelly in Houston. This version is with shredded chicken thigh instead of goat and poblano mole instead of Korean ingredients. (I actually think it would be even better using goat still.) 10/10 dish. Mole and rice dumplings pair beautifully. 🍽️
