Seems that Bistorta officinalis rhizome might have a less challenging flavor.

Nice! Bistorta bistortoides is restricted to western North America, having a more egg-shaped, pure white inflorescence and slender leaves than this Eurasian counterpart. From photos it appears that the tuberous rhizome is more likely to plunge taproot-like.
