I love local pasture raised lamb (and wool) from Bide a Wee, and just baked a shank in my glass bowled Air Fryer - mmm!
I used veggie stock (freeze OG trimmings - carrot and celery tips, onion and garlic skins, etc) and simmered those during the first 20 minute bake. 1/2
