Yeah, Revolution was around... 270k? I think? And it didn't gove me any issues. Intended is currently at 220k and it hasn't given me any issues there yet.

I haven't had any issues getting jars to seal with water bath canning, but ao far, I've had 3 refuse to seal with the pressure canner. It's annoying me.

My friend keeps assuring me it's easy, and there's nothing to worry about. But if that’s the case, I'm pretty sure there wouldn’t be so many dire warnings about MAKING SURE YOU DO IT RIGHT.

The downside is... if you're the slightest bit careless the pressure canner can depressurize... rather forcefully. Or you could get botulism. So LEARNING to do it right without blowing up your kitchen or poisoning yourself is a bit terrifying. My canner is electric, so easier, but not idiot proof.

It involves a contraption that holds high pressure at a temperature of 100°C for as long as it takes to kill any microorganisms in the jar (time depends on jar contents) and therefore rendering the food inside shelf stable.
