I think I prefer the second. It's got a slightly richer taste, and I don't know if I like it better because it's actually better, or if it just tastes more like butter and that's what I'm used to.

Chilling complete, and scones baked. First batch left: made with ultra-pasteurized cream with butter added. Second batch right: only heavy, pasteurized cream (not ultra).

Next attempt at clotted cream is underway. This time with the right kind of cream. Next step, bring to room temperature, then chill for 8 hours before separating. It smells amazing.
