It's purely for the caramelized honey flavor. I never tried wild fermentation since it's pretty unpredictable, and commercial yeast will pretty much always overtake the wild yeast.

I've never made this specifically before, but I've made mead where you cook the honey. When it starts smoking it can end up tasting smoky, usually it's good to try to go as low and slow as possible, but IME it's not bad when it just reaches the smoking point.
