Or failing that, they're almost certainly using products or services that have themselves utilised AI at some point in the development process e.g. GitHub's Copilot.

Yeah, I get out of context the title looks bad but this guy genuinely makes some great videos and definitely 'gets Tolkien'. He'll often really dive into the minutia on a topic and cite various letters he wrote.
