Which god smells truly terrible but tastes so good - but I’d only eat it fried. Or was it oyster “pancakes”? I’ve realized the Taiwanese have an (imo almost alarming <.<) penchant for gooey foods… which is not a thing/texture I can get with.

I’ve heard that! [Food] people talk about goose fat potatoes but rarely seem to cook goose so I’m like “where is all this goose fat coming from?!”

So far no pies or even sweets here, but I’m playing with the idea of making this - food52.com/recipes/1514... - toasting the pumpkin is life changing. I pretty much toast my pumpkin for any recipe now.
At some point I’ll make an orange pumpkin cranberry cake but likely for myself for Christmas.

Oh I don’t know if I’ve had something cooked in goose fat before. Maybe at a restaurant but I don’t remember if so. Duck fat fries were very popular in the 00s iirc … and of course I’ve had things cooked in lard.
I can’t tell what kind of oil was used for eg stir fries but my dad can.

Nice! I’ve never been to China. If I did go though I probably still wouldn’t have goose/it’s not [ever] going to be my protein of choice. Crispy roast duck on the other hand, yes please.

I’ve tried oat, soy, coconut, and almond milk(s), even a black bean “milk” before, but none are as good as cream imo - it’s just I can only add a little.

My family always dry brines whatever fowl - chicken, duck, the rare turkey or even rarer goose (😅 dunno why I’m pretty resistant to the last)

It looks it! Tho tbh I’d be happy with like the cream of mushroom soup kind too - I’d just sauté some sliced mushrooms with garlic probably to add in/bump it up a bit.
I’m the only one in my family who likes any casserole though so it never happens. I don’t think I’ve made a noodle casserole in yrs.

Oooo that looks so good - and cooking the mushrooms in the shallot oil 💯 (though tbh I’d probably go with like store bought Vietnamese ones too)… I actually love a good green bean casserole but very rarely have it.
