I mean, sure, it’s kinda chilly. But if you were having surgery, at least all your anesthesia would be covered! (She -a MN transplant - says, bitterly, from Missouri) (not bitterly cold, tho… it’s only 40F here ;)

Personally, I don’t mix green chile with yellow cheese, so cheddar would be a no for me. White cheeses only, imo.
I’d do a Monterrey Jack, and maybe a Oaxaca or fresca. Cotija on top w/ crushed tortilla chips.
