And the butternut squash and fennel gratin is baked. Smells amazing, and I think that cheese, breadcrumb, and pistachio crust will keep it from leaking in transit.

Technically it’s all caramelized. Culinary definitions though refer to the low and slow cooked onion (45 min to 2 hours) as caramelized where it cooks down sweet and almost paste-like. Faster, higher heat methods that keep the onion intact is called browned.
