I remind myself that the phase we are in right now is the Backlash Against Progress - which happens because there *was* progress.

The remarkable thing is you can leverage this.
You can, with effort, convince the model that what pleases YOU is accurate, well-sourced information and sound reasoning.
You can make the model argue, disagree, and tell you when you are wrong.
I have done this. It’s not trivial but it’s possible.

This is true. The third stage of training, so-called RLHF, teaches the model to please the user. It also teaches the model what the average user finds pleasing.
