Fun first day in the city. We loved & Juliet, and then we had dinner at La Grande Boucherie, and checked out the ice skaters at Rockefeller Center. Met up with our nice who is a student at Fordham.

Everyone debates the merits of the spatchcock, but I'm here to tell you: consider cutting the halves of the turkey off the carcass, dry brining the meat, and roasting the carcass to make your stock for gravy and other dishes (like dressing/stuffing) ahead of time. 🍽️🍜

I actually take it further and cut the halves of the turkey off the carcass-- it's the exact same way the restaurant where I work does the half-chickens. I like it because then I can roast the carcass and make my gravy stock ahead of time. Then I dry brine the halves on sheet pans in the fridge.

So “Camp Christmas” is taking over the building at work. Camp as in campy. We are “The Winter Pearl” for the season. The vibe is a bit “look at this stuff, isn’t it neat, wouldn’t you think my collection’s complete” but I like it.

Dinner was very “family meal” because I had leftover fennel and some potatoes to use up. Mashed potatoes full of Gouda, topped with fennel, onion, pepper, and tomato sauce with lots of smoked paprika and a fennel-heavy sausage.

So far: roasted some squash with rosemary, thyme, and hot honey. Made cornbread dressing (I made the cornbread yesterday.) made green bean casserole minus the onion topping. Roasted a bunch of wings that are now in the instant pot to become stock for gravy. Turkey breasts just went into the oven.

On this day two years ago Jon and I were picking up our salvaged kitchen cabinets. We hadn’t even closed on the new house yet, but when I saw those maple slab fronts for only $2500, I knew they were key to the new kitchen I was envisioning.
