Topped our meatslab with tomato sauce, and provolone cheese, then under the broiler. Top half got a generous spread of home made pesto and voila, we have a perfect big stupid sandwich!

We cut a slab to fit the bread and tossed it on the griddle. We shall see how this actually works.

Filet skills need some work, but a 10 lb fish will end up with six 2 person portions. Backbone is going on the grill tonight, head tail and collar/belly trim are going into the stock pot.
