12. Once risen enough so the loaf is touching the cling film remove the cover and spray the top with water. This took about 45 minutes which is too fast shouldn’t have bothered with the extra yeast.

Transfer to the oven and bake for 40 minutes.

You can see the top of the loaf is splitting FFS

11. Shape the dough and put it in a greased and lined loaf tin to rise. Cover with cling film. Preheat the oven to 200C (fan)

10. Knead the dough on an oiled surface for about 5 minutes. Put back in the bowl and cover to let it rise until doubled in size, this took 20 minutes

6. Transfer the slurry to a bowl and mix with 300g strong white flour, 70g wheat gluten, 3tsp instant yeast, and 1tsp of sugar even though you know it’s not going to work

5. Transfer the crisps to a food processor and create a crisp slurry.

At this point I tasted the crisp slurry and was happy it wasn’t too salty at least

4. Simmer the crisps for 5 minutes in boiling water and drain them again in a colander.
