I ran around 30 RPG one-shots this year, the majority of which were with players I didn't know and a game I hadn't played before. I wrote up how I structure my one-shots to keep them short and pack in as much fun as possible, regardless of system. Hope it's helpful!

It has been two sessions of UVG and my players have changed their caravan logo twice, despite the fact that it costs at least $100 each time and they are deeply in debt.
