For chicken tenders and fish, I use saltine crackers blended into powder and seasoned (Tony Chachere). Pat chicken dry, flour, egg, saltines. Press crackers onto chicken. Fry in 1/8"-1/4" oil in an electric skillet. Not sure if this would work for bone-in pieces...
