Might’ve driven this thing a combined week over the past month because “check engine soon” lit up about three miles off the lot when I bought it in mid September. Technically my fifth car over the past year. Whatever luck I have in picking out shelter dogs doesn’t carry over to used cars apparently.

Busy day. Jerk sauce-usage TBD but it’s solid; some fresh ground beef (grill them patties well done if you like, they’ll still be juicy,) and a petite filet from the case for a customer with caramelized onions, cowboy butter and chimichurri. Let’s do some more tomorrow, shall we?

I made what I guess is a chili/red beans and rice hybrid? Bacon, sausage and pork cubes cooked off with half an onion, simmered with diced tomatoes and seasonings. Later added beans and corn (so not chili) and served over cilantro lime rice with some cheese Texas toast.

Made some cheese grits with caramelized onions to put the leftover swamp stew on. It’s divine. Holy shit.
