Are you familiar with Blades in the Dark? It's not the same but the vibe feels similar—there's no pre-planning but a lot of problems are resolved through flashbacks showing you all actually *did* plan for this moment. Very fun way to run heist-type games.

To be honest I thought Stripe was one of those smaller piggybackers until I just now double checked! Certainly they weren't safe either way but they do apparently deserve specific mention as they're not beholden to the big 2 as I thought.

Shutting this stuff down keeps them easily on the right side of the law wrt both actual sex work stuff and bigots constantly trying to criminalize being queer. And they simply don't care to cater to those customers unless everybody makes a lot of noise about it.
