Thanks for the encouragement. I managed to get a good night's sleep then did a solid 4 hours work today. I am now feeling much better and am officially unstuck 🙌🏼

It's great with peas/sweetcorn too - if you're a 12th dan veggie smuggler like me and trying to sneak extra veggies into kids' meals 😆

I make this in large batches and freeze it in portion sizes. It's very good even if you leave out all the extra spices (kids don't like 'em) and just add onion, garlic, turmeric and bay leaf. I also use sunflower oil instead of butter. Microwaves easily from frozen.
