Thanks for the encouragement. I managed to get a good night's sleep then did a solid 4 hours work today. I am now feeling much better and am officially unstuck 🙌🏼

I make this in large batches and freeze it in portion sizes. It's very good even if you leave out all the extra spices (kids don't like 'em) and just add onion, garlic, turmeric and bay leaf. I also use sunflower oil instead of butter. Microwaves easily from frozen.

Vegetable chilli is one of the easiest meals to make. Handy for the slow cooker, freezes well, and is nutritionally balanced when eaten with rice.
