My all-time favourite soup - especially on bitterly cold, yet bright, sunny days - is Tom Yum at Sapporo Teppanyaki in Liverpool.

While this soup in its original form is mixed seafood and noodles, I tend to have it with salmon only.

My absolutely favourite was the Arayes. It was so unique, compared to others I've had.

I can't wait to visit again and try the other dishes.

Every day is World Chocolate Day for me.

My only regret is that I'm not travelling as much these days, and one of the highlights of my overseas trips is tasting chocolate from around the world.

So, I'm stuck with British chocolates!

Your photo reminds me of the incredible Palestinian restaurant you recommended on your Instagram ("Akub" in Notting Hill).

I visited last September, and the food there was phenomenal. It was totally unlike any other cuisine from the Levant.

It will be 31 years next week since my dad passed away. For the first few months, it didn't hit me, and then I was shell-shocked.

The condiments you add to the shawarma at the end is what enhances the flavour, e.g. onions sprinkled with sumac.

Nigella's recipe is oven-cooked. You can also use a skillet (see below). I prefer oven-cooked but layers on a skewer instead of strips of chicken.

With shawarma, Penk, marination is key and ensure that it's only lightly spiced. I would use 20% fat with 80% lean. The natural fat moisten the meat so it doesn't dry. To cook in an oven, I'd use thin yet not too wide layers and continually rotate, perhaps shaving cooked meat so it doesn't burn.

Chicken, lamb, or mixed shawarma has to be one of my favourite snacks of all time.

I keep it simple. Flatbread, choice of meat, lots of onions, pickles, and garlic mayo.

But, it's the layer upon layer and inconsistent cooking of the meat via a slow spit roast, which is key.

My friend of +35 years/Ladbroke Grove boy, Ray Gelato, has a fantastic rendition of Dean Martin's "That's Amore".

I didn't get a chance to take photos when I was in Abidjan, 2 years ago as I was too busy. But hopefully, this time I will & I'll send you photos of local cuisine.

I'll also try to identify traditional cook books, but they'll likely all be in French.
