You do remember correctly and yes, she did lose certain parts of her human psychology (including grudges).
Lich story: Demetre doesn’t hold any grudges, but mostly because she cannot really remember anyone she would hold a grudge against. And many of them would have been dead for centuries by now anyway. She’s also too impulsive for grudges. Piss her off and she’ll act immediately.

Mr.Shang’s default mood is pissed off. But he does harbor a special hatred for Taigong Wong and any his descendants, no matter how distant the bloodline may now be.

Evil/Hell: Oh yes. They hold grudges. And sometimes they hold grudges for the absolute pettiest of reasons. The form that serves as the Lord of Anger is a particularly unique example. He loves grudges so much he’ll take on other people’s grudges for himself as part of some if his contracts.

Antags:
Funny enough the Monster King and Queen very rarely hold grudges. Their species’s psychology makes it an uncommon behavior. It has to be a deeply personal offense, such as attacking a loved one.
The Emperor does not hold grudges…mostly because grudges imply long term. And if you’ve pissed him off that bad, he’s going to deal with you “efficiently” (which is his way of saying he devestates his enemies so mercilessly that they’ll be afraid to seek revenge). Luckily, it’s very hard to-
Nozomi doesn’t hold grudges. But there are people she dislikes and won’t trust. But honestly, to get to that point with Nozomi the person has to be a real POS, because she can forgive just about anyone.
MCs:

Inazuma usually won’t hold a grudge. The exception is the Mad Scientist. For Inazuma, that he’s a blight on Japan’s history. Worse still, the Mad scientist is from Osaka, like Inazuma is. Japan’s greatest hero and worst serial killer are a mere generation apart.
