Amazing to me, too. Denmark was the country for me. My biggest regret is staying in the US to raise my children. I should have done what I really wanted to do - move to Europe.
I absolutely loved my week in Denmark last summer. I would love to go back for a longer time.

I read this morning that dna tests in Iceland have a detector only found in Native American people, so those Vikings in Vineland took some company back east with them. So cool!

So easy - line foil in pan, spread green chile on bottom, place brisket on top fat side up, season. I added a half cup apple cider this time. Bake 325 for 1.5 hours, lower to 250 for two hours. Perfect. Not dry.

Still fun. Husband 82% African - higher than most African Americans according to Finding Your Roots. 17% European (we share some locales) - and a real mystery - he's 1% Philippines! What??? Some mystery sailor, perhaps?

Ancestry updated dna profiles - 68 new Europe regions! Way detailed. New surprises in there. My "Russian" ancestor from Ukraine was neither. He seems to have been Lithuanian, Slovakian, a drop of Pole? For me that means very small % of each, but he's my only East Europe.
60% UK/Ireland; 27% Nordic.

Waiting on Dish Network guy. No tv - husband practiced bass guitar for a few hrs. He wouldn't have otherwise. I got my indoor walk wearing my new headphones. Used them for hours; they hardly used any of their charge. Wow! Hoping cold/cough is waning. Brisket with green chile still our meals. Yum!
