there are some very acceptable Italian red wines that don't break the bank, San Giovese grapes are best for this- so Chianti is safe
you don't need the Brunello di Montalcino for this just make sure it's from Italia❤️
coarsely grind your peppercorns yourself no pre-ground

what I did per pound of cubed up chuck roast-
1.5 tsp coarsely ground pepper
several tbsp olive oil
1/2 bottle good italian wine San Giovese preferable
3 smashed garlic cloves

perhaps it was the wine? did you try it first?
