Oooo I love cauliflower (fortunately my husband can have that, he just can’t have cheese)
My husband can’t have dairy (and I have yet to find a dairy-free cheese that isn’t pointless), so most nights I can’t include cheese. Sad face. But husband now has a meeting every Wednesday night and won’t be home for dinner, so I changed Wednesday’s theme to Cheese-And-More-Cheese. 😁🧀🧀🧀

SAT: Salt Lick BBQ Ribs
SUN: Chicken Marsala
MON: Ranch Roasted Chicken
TUE: Takeout
WED: Chili Con Queso Soup
THU: Beef & Pork Tacos

Kiddo likes the Chili Con Queso Soup too, so it’s a good choice for Cheese Night. 🧀

Seems to be a sickness going around the office again. Hmmm what could it be? 🙄
Dinner tonight is Stromboli, “an American-Italian dish made from rolled pizza dough filled with meats and cheeses.” I used homemade pizza dough, and filled it with deli-sliced pepperoni, genoa salami, and mozzarella. Very good. Served with marinara sauce. Our veggie tonight is Brussels sprouts. 👩‍🍳
Ok so: inflatable costumes, and American flags. 🐸🇺🇸
Heard a strange sound so I looked out the window and there was a raccoon in my backyard! So now I’ve seen a grey fox, an opossum, and a raccoon, all in my backyard (along with the usual squirrels and birds). We have a fence but they get in the yard somehow.

It’s a snores d’oeuvres or a snooze-bouche
When looking at recipes, I’d like it to be authentic but that doesn’t matter nearly as much as whether it’s good. If it’s delicious, it’s fine if it’s not “authentic.” And if it’s “authentic” but meh? Forget it.
I’ve been making a new side dish, it’s little cubes of zucchini, little cubes of yellow squash, and fresh corn (cut off the cob), sautéed together in butter or olive oil for about 5 minutes or so. It’s pretty good, and husband and kiddo seem to like it a lot, too.
Happy Spaghetterday, to all who celebrate. Dinner tonight is spaghetti with meat sauce (family recipe), served with ciabatta rolls and roasted asparagus. 🍝
Kiddo made really good mac ‘n’ cheese from scratch today. Elbow pasta, butter, pancetta, garlic, tomato paste, cream cheese, heavy cream, and mozzarella. YUM. 💯

THU: Chicken Fajitas
FRI: Beef & Veggie Soup

Will be using homemade pizza dough to make the stromboli, and the filling will be mozzarella, pepperoni, and genoa salami.
I make sure to cook roasted pork every 3-4 weeks so I have some to keep in the freezer for a taco night. I always cook it the same way (and it’s so easy, and so delicious) but I’ll serve it with different sides. Might try making banh mi with it sometime.
Dinner tonight is Spinach & Artichoke Sheet Pan Lasagna. I was going to change it to actual lasagna but decided I’d better just follow the recipe (and anyway it’s faster and easier than actual lasagna). The recipe says it’s based on a viral recipe by Giada De Laurentiis. Very good. A+ 👩‍🍳
