Great steak fry-like wedges of sweet potatoes roasted with honey, lime and chile flakes, topped with crispy chickpeas and yogurt to make an easy but complex meal you probably won't even want to share. (We won't tell if you don't.)

A casserole, but not the boring kind. Here, I switched out pasta for a whole grain and ended up with a cozy, wildly flavorful, cheesy, crunchy-topped dinner that we make again and again.

Potato leek soup, my way: The kind of hearty, cozy soup needed on a rainy day plus a few strong opinions on sour cream, chives, and lemon (they're essential) and the crispy topping nobody can resist.

For some instant joy right now, may I recommend a really easy sprinkle cookie recipe that tastes even better than it looks? They're plush, complex, fragrant, and also, you know, really cute decked out in holiday sprinkles. You're going to love them.

A sky-high vegetable lasagna, five layers of noodles, sauce, cheese, and vegetables (that are not an afterthought, for once). The top layer is crackly with melted, deeply bronzed cheese over garlicky tomato sauce and might be the very best reason to make this.

Easy-peasy cornbread waffles that can go sweet (sautéed bananas, maple syrup), savory (cheddar, salsa, avocado) or a little of both (fried chicken, hot honey, please). I think we should. [Thank you @joythebaker!]

A bright, crunchy and abundantly welcome contrast to the richness of the usual Thanksgiving fare, this is a forever winter staple.

A dinner roll that springs open in the oven like a fan with buttery pull-apart segments looks fancy but is so simple to make. I hope you get obsessed with them, too.

New! A dream of a pumpkin basque cheesecake that rewards last-minute planners with speed and ease. Almost halfway to pumpkin pie in flavor yet still a basque cheesecake, burnished edges and sunken-by-design center and all.

In this week's SK Digest, we're rewarding the last-minute planners among us (hi!) with a collection of recipes that don't require much thinking ahead. This week, we’re also chatting with Diane Kochilas, whose cookbook, Athens, is out now and I want to move into it.

I rarely saw straight-up cranberry pies so I made my own. I found that the secret to a great one was an even better contrast. This is topped with a thick crumble of oats, toasted pecans, cinnamon, brown sugar and butter and it's heavenly against the tart berries.

The spinach is buttery with a layer of crispy crumbs and cheese on top but manages to stay unheavy. It keeps and reheats fantastically, not that there are ever leftovers. The updated recipe includes instructions for using frozen spinach so it's easier than ever.

My forever favorite simple, buttery, and flexible challah stuffing (dressing). It's a total crowd-pleaser raised to otherworldly levels because challah adds just the right level of sweet richness while it remains herby and savory all over.

Do you or someone you know suffer from Pecan Pie Deprivation Syndrome because of a nut allergy? With oats, chocolate, and a gooey salted caramel, there's nothing even a little second place about this.

Potatoes and leeks slow-baked in cream with a burnish of cheese and fine buttery crunch on top are the perfect welcome to gratin season, which is not a thing, I just made that up, but really should be for colder weather and short days ahead.

A buttery pecan gingersnap base, lightly sweetened pumpkin cheesecake center, and a swoosh of bourbon-spiked sour cream on top, I'm not even welcome at Thanksgiving without this and I'd take it personally if I didn't know how good this actually is.

Classic, buttery, tender and stretchy Parker House rolls with a pretzel wash that makes them dark, shiny and unmistakably special on top. Trust me, the only thing better than making these for the big meal is having a guest who brings them still warm.

This apple-cranberry crisp is fragrant with citrus and cinnamon and is topped with an improved polenta streusel that tastes like buttery crumbled cornbread. I refreshed this recipe this week and it's now less sweet and perfect for the fall-winter holiday.

This is Smitten Kitchen's only turkey recipe, because you'll never need another: burnished, perfectly cooked and crisp-skinned on a bed of onions that have been cooked in salty, buttery drippings. Oh, and there are five ingredients. And gravy. You've got this!
