also, béchamel is more user-friendly for people who are afraid to make it with an egg custard.

some people don't know how to temper the egg, which leads to scrambled eggs in the cheese sauce, or they use too many eggs, and the final dish is denser than fruitcake.

i must be in the 20% because i've been making bechamel for mac-and-cheese for over a decade and ain't never had to worry about uncooked flour taste.

and i only use 3 cheeses: sharp cheddar, extra sharp cheddar, and colby jack.

They have to use five and six or seven cheeses because they do a roux instead of egg and never learned to cook down that nasty uncooked flour taste and need more cheese to cover it up and make it taste good….

80% of y’all who use roux do not cook that flour down. 🤷🏽‍♀️
