I’ll also say the best BBQ in the state of SC is Texas BBQ and comes from an Austin transplant in Charleston, Lewis BBQ. Worked under Aaron Franklin. Amazing. Make a hatch chile beef and cheddar that is out of this world. Comes w red pickled onions, pickled jalapeños and big ol butter toasted bun.

Here in South Cackilacky, pickled red onions and pickles are pretty usual. Sometimes raw white onion as well. But, this is also pork w/ vinegar based sauce country as well, so makes sense.
