Sorry, I just realised that you may have meant the sounds thing. That's settings > sound settings > more sound settings > sounds tab > sound scheme > no sounds

(no idea why they bury it like that 💀)

We can change some things but they do lock a lot at a group level, which is annoying.

And the one that gets me really irrationally grumpy is the way they turn system sounds on by default. That beep every time you change the volume makes me want to chuck the laptop at the wall. 😅
