Dinner Tonight: Carrot-Saffron Risotto

I keep a Costco-sized jar of shredded Parmesan on hand and have been lucky enough to have a jar of saffron in my spice pantry, I could throw this together in nothing flat. Pramas kindly praised my “forethought” paying dividends now. I’ll take it.

One of the country's most successful and respected geology & climate programs: gone.

When ideologues & politicians are threatened by the very act of studying climate change, I wonder: who of us is next?
It's over.

Despite the fact that the academic council recommended against it, despite the fact that the program brought in more tuition than it cost, and despite the fact that Nebraskans need & deserve this expertise, Earth & Atmospheric Sciences will be cut.

Dinner Tonight: Saag Paneer Lasagna

This recipe intrigued me so much, I HAD to make it. I recommend trying it when you have plenty of time, not after a long day at work like I did. 😅
