Upon seeing the wide-eyed gaze of this innocent schoolgirl, her tousled hair framing a face filled with quiet curiosity and unspoken stories from a distant classroom, I had to put my camera down. In that moment of stillness, I reflected on the fleeting nature of my own life—the privileges, the cultures fading away before my eyes, and how a single child's unfiltered expression can cut through the lens to remind us of our shared humanity. My #applecake I made for #Thanksgiving #Peace Recipe in the alt description. #Canada
Mix together and set aside:
4 apples, peeled, pared, and sliced.
1 tsp cinnamon
4 tbps sugar
In a large bowl mix:
1 cup of canola oil
2 cups of sugar
4 eggs
Add:
2 1/2 tsps of vanilla
3 cups of flour
3tsps baking powder
1/2 cup of orange juice
a pinch of salt

Pour 1/3 of the batter into an open centre pan
Add some of the apple mixture
Continue alternating, ending with apples on top
Bake at 350 degrees F for 1 hour or until a toothpick comes out clean. 
I personally am a little picky with this, and like to arrange the apple slices in a pattern as you can see. I do this for every layer. Also I like to use cortland apples for this cake, but any apple will do. It's just that the cortland ones are usually firmer and larger and keep their shape. Enjoy!
