i don't agree! i used to cook them dry, now i wash them, because if you weigh them after washing, you can see how little water they actually take on. i think that pan crowding is a much bigger issue for mushrooms and their water

i was a diehard dry mushroom guy for a long time, but if you weigh them before and after washing you can plainly see that it's not making much difference. and what's more, they give up any excess water while cooking

just saw some disinfo, so I'm setting the record straight: you should wash your mushrooms before cooking them. they have dirt on them. it will not affect your end product, they do not absorb a bunch of water, it's fine
