We needed some fresh leaf spinach for another dish and decided to cook the rest of it and make creamed spinach as a side dish. Friends, it cooked down so much that we each got about a tablespoon size serving.

I don't mean to keep hammering away at this drum, but I am currently in the hospital on Thanksgiving because I spent years putting more than my body could do into a job that was actively trying to kill me for not doing even more
