Nice strong fermentation already going. I'll probably have to switch to blowoff later today. Fermenting using Omega Irish Ale in the low to mid range of its recommended temps for a bit of complexity.

A nice brew day and ten gallons of wort to show for it. It smells delicious already. Brewing this beer was a good way to relax and reset on a Sunday.

A lovely overcast day with occasional rain showers. Perfect for brewing some ale.

Prepping everything for a Sunday morning brew session. My assistant brewer, my daughter, loves getting me to make orange colored ales because she thinks they are pretty.

For me, fall and winter beers are perfect for fixing chemistry and efficiency issues. I like malty beers this time of year, and those flavors mask little issues better. This next beer's base malts will be Maris Otter and Munich malts. I've done variations of this beer before and it's delicious.

Doing my water chemistry before brewing Sunday. My brew house efficiency has taken a bit of a hit since we moved to New Mexico, so I'm focusing on my old house standard chemistry. I've also moved temp monitoring to the middle of the mash and recalculated my strike water volume, which was a bit low.
