Weirdly I'm happy to find that the iPod only has audio in one channel and not the other
It means the issue is, in fact, the ribbon which is gonna be an easy fix

iPod update:
So today I tried again and I did get the audio and hold switch to work! It took some work to figure out how to secure the ribbon to the connector properly (I broke off the latch that holds it in, not knowing it was there lol)
But the click wheel speaker is definitely broken
