I hate seeing stripes of the forest cut down to make place for ski tracks. I find it extremely ugly.
The (fairly) nearby town of Harrachov in Krkonoše mountains is hit particularly bad with this trend, but it can sadly be seen even around Liberec.

To me, it's just disgusting. 🤮
Over the years, however, I've noticed a gradual return to the old mixed forests with plenty of beeches, maples, firs, and birches.

Not only does this make the whole forest stronger and more resistant, it's also much more beautiful to look at in autumn.
One of the good things about getting older is watching the scenery change.
When I was little, the mountains around my hometown were nothing but spruce monocultures, which were extremely vulnerable to pollution (which used to be a huge problem here in northern Bohemia), drought, and strong winds.

I also used to dislike white chocolate, but during my time as a pâtissière, I realised it's more a matter of combining it with appropriate flavours than it being actually bad.

Yes, I still prefer dark, but white chocolate can be pretty damn good. The thing is - most people/chefs don't even try.

-white chocolate, Cointreau & orange parfait

A printed set of World Book encyclopedias is $1200 and only captures info up to the window in time in which it was printed.

A few bucks a month can make sure a vital resource that's constantly updated and rigorously scoured for inaccuracies by benevolent pedants remains available to everyone.

(That said, I can't really imagine the finale of Prokofiev's Piano Concerto No.1 being played any faster and/or more forceful than it already is. I suppose it would be just /noise/ in that case😆)
Like during the finale of Rachmaninov's Piano Concerto No.2, you're supposed to feel the force and the god-damn /gravity/ of the piece, not feel like the conductor and/or pianist just want to get it over with.
It's funny, how much conductors matter in classical music.

I have these pieces I absolutely love, conducted by certain people, and when I hear other conductors' version, I'm like "NO U!"

(I particularly hate it when a piece is too rushed, which seems to be very common nowadays.)
