It depends if they’re sliced or cut into wedges or whole. Generally, it’s worth checking they’re tender after 20 to 30 minutes if sliced, or they can take up to three hours if whole.

In the poaching syrup in a container in the fridge. They will keep for a few days. It is possible to preserve them in jars using a canning method to keep for longer also.
Thanks to #StormAmy today's acorn foraging was very productive. These will be shelled, roasted, and then used to flavour a pannacotta, accompanied by a spiced pumpkin ice cream 🍨
Beautiful quince picked yesterday from our own orchard.

These are the first harvested from our tree planted 8 years ago.

Some of these will be poached to serve with the game dishes over the coming season.

The rest will be the glorious jelly served on our cheeseboard.

Despite the weather, summer is still holding on.

As well as these raspberries, we also had some incredible courgette flowers from Kate's dad today.

So a last taste of summer will be available this weekend, alongside the autumnal treats we are creating.
