...and the plus side of this option is, after doing this and you decide you hate it, you can always revert back to "vanilla" android and you've got a more mainstream phone again.

Your alternative is to get a Pixel phone and load GrapheneOS on it. Last-year's/refurb Pixels go for pretty cheap and they are quite capable hardware wise. grapheneos.org
