teaching trick I would highly recommend: share your tablet screen on the projector (I did this by mirroring the tablet to my computer) & use whatever notes app you have as your whiteboard. lets you face the classroom & move around freely, & now you have lecture notes you can share with the students

Given that anyone with a brain ought to recognise how many “national dishes” were impossible pre-Columbian Exchange, it’s nice to finally see pushback on the inherently ethnonationalist/racist claim that some cultures have “authentic dishes” and other “parasitic” cultures only “steal” them
