The way multicloud is supposed to work is that you run both stacks in both clouds, you DNS load balance between them, you change the weights if there's an outage in one cloud.

most orgs are multicloud because they acquired a team that was using a different cloud and they ain't reinventing that wheel, or they have a second cloud option for fallback on something completely critical but doing pick and mix on every project adds so much friction and complexity
