Start small. In fact, start by joining some game jams, they can be an awesome way to test out ideas and get to know how things work. Oh, and experience the pressure of gamedev in crunchtime!

Aha, ok. But for things like documentation and images (if not too large) just put them in a folder in your project and git it as well. Or make a new project for documentation and git that.

This is unity, right? I recognize some of the physical whimsies. Setting the right shapes, sizes and custom behaviour for your colliers is the key to getting consistent results. And yes, it requires a lot of experimentation.
